Weekend Wonderfulness
I seem to remember that I used to post weekend recipes on here....
And really, I am not necessarily getting back into the recipe posting as much as I didn't want the cat post to sit there all weekend.
A dog post and a cat post in the same week could lead one to believe that I am primarily a pet poster.
Which I am not.
Except for some of the time.
And since it has been eons since I've posted a recipe, I am going to give you my best.
I've been holding out on y'all.
I make the best cookie ever.
Yes. That's right. I said EVER.
So I think we're just going to call it
B's Best Cookie Ever
1 cup butter
1 cup sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla
2 1/4 cups flour
1 tsp baking soda
1 tsp salt
2 cups chocolate chips (gotta go with semisweet here, peeps)
2 cups coconut (the Angel Flake kind)
Preheat to 375.
Cream your butter and sugars until fluffy-ish. Beat in your eggs, then stir in the vanilla.
Mix your flour, soda and salt in another bowl. Stir mixture into the fluffy-ish mixture.
Stir in the chocolate chips and coconut. Weenie Girl sometimes has to get her hubby to help. It is thick.
Plop spoonfuls of dough on your cookie sheet. Please use parchment paper. Then you don't have to wash your cookie sheet and you won't be mad at me for making you use 2 bowls.
Bake 9-11 minutes. Let them cool for a few minutes and then put them on a cooling rack. Or eat them. I really don't care what you do with them from this point.
I really hope you'll try these. I'm not a fan of the coconut, but I love these little clumps of goodness.

I wish I had all the ingredients; I'd make some tomorrow. Then I can eat them and say, "Well, they're awfully good, but they aren't as good as MY best cookies." ;-)
Someday maybe I'll post a few of my most-requested cookie recipes...

Ooohhhh. You had me all the way until "coconut". However, in true bloggy spirit, I will try them. I might try to figure out a variation on it for all of us "non coconut peeps." I'll keep you posted on that.

I am so trying these. I love coconut and my family only eats chocolate chip cookies ever it seems so this might be a good way to be wild and crazy without being so wild and crazy. Huh?

I am now going to have to try these and I thought we had the best cookie recipe ever (that I'm holding out on everyone still)...
I absolutely love coconut...oh man...i'm never going to get thin. *sigh*

It's the morning after. I made these last night at 1030pm. I even made extra for the neighbors. So I went to bed at nearly midnight. AND I even had three cookies LATE LATE last night. At least three. And I ate some batter. AND YOU KNOW WHAT? I weighed the least I have ever weighed since I started my diet in June. AMEN to these cookies. Mahalo from Hawaii!!!

i LOVE new recipes! especially ones that oppose the 8 months i spent losing all the extra weight on weight watchers :)
i'm wondering why semi-sweet instead of milk chocolate? i'm not a baker, and have always wanted to know why you choose one over the other...
